Learn how to make shrimp stock
Hello savvy shoppers! Congratulations on buying shrimp that is free of pollutants and free from harmful farming practices both to the environment and to people.
We know you spent your hard earned money to buy this high end product and we want to be sure you get the most out of your experience. Many people asked about how to peel them, you can watch our video here. Before you watch the video know that cooking them in their shell with the head on gives the shrimp enhanced flavour, but sometimes we want to make a dish that would be better without shells.
If you do shell them first be sure to keep the heads and the shells because you get to make SHRIMP BROTH and Shrimp broth can make: various shrimp soups, shrimp bisque shrimp risotto, seafood stew, shrimp scampi, shrimp chowder or simply shrimp broth with fresh herbs…the world is your oyster, uh shrimp shell.
Shrimp broth is easy! Check out the simple recipe below.
1. Take the shrimp shells (min. shells from 1lb of shrimp) and sautee them in some butter or avocado/olive oil or both.
2. Add onions, celery and garlic chunks with any fresh or dried herbs that you prefer or what you have on hand. Sautee for approximately 6 minutes more.
Today at the farm, we added to the shells from one pound of shrimp:
- 1 sprig fresh rosemary
- a handful of fresh dill
- 1 tsp dried thyme
- 2 bay leaves
- 1/2 tsp chili flakes
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp vegetable bouillon
- salt and pepper
3. Add just enough water to cover all the ingredients. We added 1 cup of white wine and 5 cups of water.
Note: While thyme, garlic, bay leaves, salt and pepper are fairly standard you can make this your shrimp broth by playing with any fresh herbs you may have like cilantro or parsley. You could also add fennel, lemon, lemongrass, oregano, tarragon, rosemary, basil.
4. Boil for about 30 mins or until it is reduced by a quarter. Strain out the solids and voila you are a home chef with homemade shrimp broth.
If you are in a bit of a hurry or do not have any of the above ingredients, just boil the shells and heads with water, store in the freezer and flavour it later when you are ready make your recipe.
